Classifies cada movimiento de inventario.

• MERMA – pérdida por caducidad, mala conservación, etc.
• ROTURA – pérdida por daño físico o accidente.
• AJUSTE_POSITIVO – corrección al alza tras recuento físico.
• AJUSTE_NEGATIVO – corrección a la baja tras recuento físico.
• VENTA – descuento de stock generado al registrar una venta.
